Carbohydrates (carbs), are nutrient compounds found in a wide variety of foods including bread, legumes, dairy products, potatoes, broccoli, apples, pasta, soda, corn, and chocolate. The most common forms of carbohydrates are sugar, fiber, and starch.During digestion, carbs are broken down into simple sugars like glucose that our body uses for energy. After we eat, our blood glucose level goes up, and that triggers pancreas to start releasing insulin, a hormone that take glucose, or sugar, from our blood and deliver it to the fat cells. That causes our body to store fat.

Overeating carbohydrates will cause augmented insulin levels, that prevents calories from being employed for energy and causes a lot of glucose to be keep as fat. In this case insulin blocks leptin at the brain, preventing it from delivering its message of satiety (leptin resistance), which lead to increase ghrelin levels, then overeating.
The low-carb diet works by lowering insulin levels, that causes the body to burn each glucose and hold on fat for energy whereas permitting leptin to deliver its message of fullness to the brain, restoring the balance between leptin and ghrelin.
NOTE: Leptin and ghrelin, are designed to help regulate your appetite, telling the brain when you are hungry or satiated.
So when carbohydrates are limited, the body is forced to burn the stores of glucose in the fat cells for energy, something lead to lose wieght and feel great.

*Bad carbs which contain very little fiber.
Good carbs are found in:
•Leafy greens, broccoli, cauliflower, zucchini, cucumbers

•Brown rice, oats, millet, bulgur
•Berries, melons, apples, grapes, peaches, nectarines
Bad carbs are found in:
• White flour
• White bread
• White rice
• White potatoes
• Added sugar
